CAPULIN... the heart of Mexican coffee


 We believe this could be a world record:
*2023 pounds of Red Ripe and Delicious 'Arabica Tipica' Coffee Cherries, grown under a shaded jungle canopy, then spread in the sun for Traditional Drying on a concrete drying table in Nayarit, Mexico. This Heart is 54 feet in length and 44 feet in width. The Yin/Yang Symbol in the center is 8 feet in diameter. The darkened streak across the middle of the heart is due to sun exposure of the sugars. The spreading of the fresh cherries began where the coffee is darkest as the project required approximately 8 hours to accomplish. The light areas surrounding the heart, is the cement of the patio showing between spreads of cherries. The dark areas are the dried cherries, from other days, whose sugars have caramelized.


Except for the freshest 3 days in the life of a cherry, during dry processing, the sugars are too hot to be together. It is very easy for fresh cherries to ferment, to change to vinegar or bloom mold in just a few hours, so they must have constant care, be kept spread thinly and turned frequently, once the skins are like 'fruit leather'. 'Natural' processed CAPULIN
is mounded and covered every night, and re-spread each morning. It takes about two weeks of constant vigilance and care. Labor intensive but the only way to produce the highest quality coffee available, in or out of the cup!

Un-addressed is this mass migration of the labor force, all leaving their villages in search of work in order to send food money back to their Families. 

Can you imagine the wrenching apart of families because one must make the perilous journey to 'El Norte'. Leaving behind their homes, their partners, their babies, their friends and their customs, just so you can drink a cheap cup of environmentally inappropriate coffee?

The commonly accepted water processing method is socially disruptive, environmentally destructive and diminishes the virtues of natural, sweet, flavorful, and stimulating coffee.

This is all done solely for the profit of the unconcerned multi nationals in control of the industry, who employ village water supplies, instead of village people for processing.

We believe the uninformed or misinformed consumers who are paying the tab, both figuratively and literally, deserve to know that there is a way to help bring abouta little peaceful balancing and equity in the exchange process allowing a benefit to the environment, to the small farmers and our coffee.
We are just talking about a method of processing which allows all the qualities, of each individual coffee region to be available to the consumer. Even if you didn't really give a damn about the plight of the villagers, capturing a coffee cherry at the height of its perfection, carefully sun drying the sugars into the seed, has got to create the best specimen of that particular coffee's potential. 
Additionally, natural processing creates all the equity and environmental considerations on its own, and allows the labor to go back into the villagers and the quality into the coffee. Whatif all the good folks simply stopped voting for a destructive process with their consumer dollars?
We Must Realize!

If we can direct a little of the cash flow back into the hands of the people, it is not as likely that they leave their homes or cut their trees or sell their land. Maybe the birds would replenish themselves?
What if the people have your money? This is where our dollars really count.

Today’s modern, cost effective processing in water, while providing a lower price tag, has little understood issues of environmental destruction and social deprivation as a result and are not well addressed by the Multi-National Corporate Endeavor!

The traditional hand processed method of production, is high cost and labor intensive, however, it does provide a healthy, Natural Coffee, and offers the consumer a far superior cup of good tasting, non-irritating, socially appropriate coffee as its by product.

We are frequently asked; "WHY DOES CAPULIN COST MORE"?

OK, CAPULIN costs more, quite simply because it costs more to produce a quality product which is a healthful benefit for the Consumer, the Planet and everyone involved!

Because it costs more to pay people enough to help them feed themselves and retain their lands rather than adding to the plight of the peasants who are being forced to cut their trees in order to provide food for their families, consuming the world's tropical forests in an effort to survive or face the journey to 'El Norte' and become illegal aliens in a desperate attempt to send money home to keep their families alive in the villages.

CAPULIN asks that you look behind that 'cheap' price tag!

Yes, it does cost more to drink a truly 'Socially Appropriate' coffee. The rewards, however, far exceed expectation. To those concerned with organic certification, using it as a means of determining if a product is natural and chemical free.

CAPULIN coffee is grown in the coastal mountains of Nayarit. Our coffee growing region is one of the few places left that has Naturally Occurring Indigenous Trees growing in the jungle.

This natural, chemical free environment, where the coffee trees are self-propagating, has no need of fertilizers or poisons as the jungle provides it's own ecological balance.

Coffee trees and their seeds in our region are like pine trees and pinecones in the Northwest. There is no need to break from the natural, chemical free, growing methods of antiquity.

While it is true, corporate encroachment and pressure upon the the small farmers to plant commercial crops which require chemical sprays and fertilizers is increasing; the best combatant is a strong market for natural jungle products.

We are frequently asked about our roast profiles. "Which is the best?"

I try to explain it this way. 
We offer 9 Roast Profiles and Blends. Imagine that I have 9 beautiful women here with me or 9 hansome men, as the case may be.
Each comes from the same mother but each is uniquely them self.
Which one kisses the best?
You would have to kiss all 9 to find out...

   CAPULIN'S CLASSIC ROASTS:

  1. · Continental ~ a light roast ~ the original Fruit Wine flavor of coffee.
  2. · Vienna ~ a medium roast ~ providing ample Fruit Wine flavor, only slightly masked with a medium roasted flavor.
  3. · French ~ a dark roast ~ almost completely covering the fruit flavor of CAPULIN, ‘but not quite.
    It is slightly similar to the roasted taste that most coffee drinkers have become accustomed to, without the bitterness.
    Most coffee companies use a dark roast in order to mask or 'hide' the lack of the natural, sweet fruit sugars and flavor oils that have been lost in their washed coffee products.
  4. · Midday Magic ~ a roast as black as a raven, yet smooth as glass ~ an incredible espresso or Turkish coffee, but still wonderfully smooth--for the folks that like the roasted flavor of coffee without the bitterness.
